Fall is here and that means pumpkin! As I was making my plans for the month, I knew I’d have to try this yummy White Chocolate Pumpkin Cookie recipe that I found at DiJESStibles!
These cookies are absolutely delicious. Take it from me, though, don’t try to make these too big because they’re delicate and will fall apart. I recommend a medium scoop!
White Chocolate Pumpkin Cookies
2 sticks butter softened
3/4 cup brown sugar
3/4 cup white sugar
2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
3/4 cup pumpkin
1 teaspoon salt
1 teaspoon baking soda
2 1/4 cups all purpose flour
1 bag (12oz) white chocolate chips
Cream together butter and sugars. Add in vanilla and pumpkin pie spice and mix well. Add in eggs one at a time. Next, add in the dry ingredients. Fold in white chocolate chips with a rubber spatula. Bake at 375 for 8 minutes. Cool on your baking sheet a few minutes before moving to your cooling rack.
