One of my goals for this month was to make this Taco Pizza. As I do quite often, I changed up the recipe a bit.
The original recipe calls for crescent rolls but I didn’t have any. I’ve seen a few recipes use cornbread and I had a mix so that’s what I used!
Cook your meat just like you would when you make tacos.
You could either put cheese or refried beans below the meat. I didn’t have any refried beans so I opted for cheese.
Taco Cornbread Pizza
Cornbread Muffin Mix (6-8 oz)
Ground Meat
Taco Seasoning
Cheese (half a bag)
Prepare the cornbread mix as directed on the package. Spread the batter in a greased dish (I used a 11×7 dish but you could easily use a pizza pan). Bake according to directions. Brown the ground meat and add the taco seasoning as direct on the package.
Sprinkle cheese over the baked cornbread and top with meat mixture (and additional cheese if you like). Bake 4-5 minutes or until cheese is melted.
We topped ours with salsa and shredded lettuce. You could easily add sour cream, olives or anything else that sounds yummy!
This is something you can throw together in a pinch. I knew Trent liked it when he asked for seconds!
