After trying most of the rice mixes at the grocery store I thought it was high time to try to create my very own. I mean, how hard could it be to add a few extra ingredients to rice?
Well, this Copycat Zatarain’s Creamy Parmesan Rice is just as simple to whip up as the box mix and I know you’re going to love it as much as we did!
Not only was it super yummy, but I also found it very fulfilling to recreate a recipe knowing that it was much healthier for my family.
Copycat Zatarain’s Creamy Parmesan Rice
1 cup Rice
1 cup Water
2 cups Milk (separated)
1/2 teaspoon Salt
2 teaspoons Garlic Powder
1/3 cup Grated Parmesan Cheese
1/2 teaspoon Parsley
- Place rice, water, 1 cup of milk, garlic powder and salt in a medium pot and bring to a boil.
- Reduce heat to low, making sure that the mixture is still simmering. Cover and cook for 15 minutes (or until rice is tender). Stir occasionally but only to enough to make sure the rice isn’t sticking to the bottom of the pan.
- Turn off the heat, stir in parmesan cheese, parsley and additional cup of milk. (If it’s not creamy enough for you add more milk.) Cover and let sit for about 5 minutes.
Yield: 3-4 servings
