I don’t know about you, but 30 minute meals are perfect for our family. Even though I try to meal plan there are days when it seems like dinner time comes out of nowhere and I need to have something on the table fast! This recipe has the meat that my husband loves, is healthy, which makes me happy, and is absolutely delicious! I promise there will be a flavor explosion in your mouth at first bite!
Having grown up in a family that ate mostly chicken and ground turkey I’m not too proud to admit that cooking pork has been a bit intimidating to prepare for a meat and potatoes man that’s eaten it the majority of his life. So when I learned about the Smithfield Marinated Fresh Pork products that are 100% fresh pork, full of protein and are already seasoned for me I was pretty stoked. (After all, knowing how to season your meat is extremely important!)
My Kroger had this Roasted Garlic & Herb Pork Tenderloin which I knew would pair perfectly with my couscous. They also have loin filets and sirloins in mouth-watering flavors like Slow Smoked Mesquite, Sweet Teriyaki, Roasted Garlic & Herb, Roasted Garlic and Cracked Black Pepper and Southwest Style Peppercorn. We’re definitely going to have to try those flavors soon!

I told you that this recipe was quick and easy! You can’t get much easier than 8 ingredients, half of which are likely pantry staples.
Oh how I wish you could have smelled the kitchen when I was making this dish. Between the roasting tenderloin and the zest of the lemon it was absolutely tantalizing!
30 Minute Meals: Roasted Pork Tenderloin with Cranberry Lemon Couscous
Smithfield Marinated Roasted Garlic & Herb Fresh Pork Tenderloin
1 1/4 cups Water
1 cup large Pearl Tri-Color Couscous
1/2 cup dried Cranberries
2 tablespoons chopped Parsley
1 tablespoon Lemon Zest
2 tablespoons Lemon Juice
4 tablespoons Olive Oil
1 teaspoon Salt
- Place the tenderloin in a 9 x 13 pan lined with foil. Cook according to package directions.
- While the tenderloin is cooking, bring your water to a boil in a small saucepan. Add couscous and simmer on low for 8 minutes. (You want your couscous to be firm, not mushy.)
- Remove pan from heat and add remaining ingredients, mixing well.
- Place the couscous on your serving dish. After cooling at least 10 minutes, slice your tenderloin and place on top of your couscous.
- Garnish with additional parsley, if desired.
Serves 3-4 depending on portion size.
Tip: If you’re like me and not exactly sure how to correctly chop parsley, use your kitchen scissors. It’s much easier than fumbling around with your knife.
Your family will think it took hours for you to cook this beautiful dish when it only took 30 minutes. And like I said before, the lemon and cranberry from the couscous along with the garlic and herbs from the tenderloin will cause a flavor explosion in your mouth at first bite. It truly is #RealFlavorRealFast!
If there happens to be any leftovers (I doubt that’ll happen) transform them into tomorrow’s lunch by putting the tenderloin in a sandwich or even on top of a salad. Why not brown bag it with your yummy leftovers?!
