I love to pin on Pinterest and have seen quite a few recipes for slow cooker lasagna floating around. So, a few days ago I was feeling a bit adventurous and figured I’d go for it and attempt to make some lasagna (it’s literally been years since I’ve made it). Ok, that and the fact that I remembered to add ricotta cheese to my grocery list a few days before.
Once you make this lasagna recipe you’ll never go back to the original way of making lasagna! I can’t believe how easy it was – and that’s something that I’m always looking for in a recipe! The only cooking involved is browning the ground meat. Yep that’s right, you don’t have to cook any noodles (or even buy special no-boil noodles).
Super Easy Slow Cooker Lasagna
1 lb ground meat (I used turkey)
1 cup water
15 oz. low-fat ricotta cheese
2 cups Italian cheese
1/4 cup grated parmesan cheese
2 tablespoons parsley
1 egg
6 uncooked lasagna noodles
24 oz. spaghetti sauce
- Brown the meat and drain. Add spaghetti sauce and water.
- Mix together ricotta cheese, 1 1/2 cups of Italian cheese, parmesan, parsley and egg.
- Place 1 cup of the meat mixture into your slow cooker. Top with 3 lasagna noodles. (You’ll need to break them to make them fit.), half of cheese mixture and 2 cups of meat sauce. Top with remaining noodles, cheese mixture and meat sauce.
- Cover with your lid and cook on low for 4-6 hours. Top with remaining cheese and cover for an additional 10 minutes (or until cheese is melted.

Trent said he would have liked more sauce but that is definitely something I can add more of next time! I thought it tasted spectacular! This recipe made enough for two meals for us (plus an extra lunch for me). I froze the extra meal for later since Trent’s not a big pasta guy.

I have made this several times and it is now my favorite lasagna recipe!! Super super easy! We like extra sauce so I add more sauce but it probably doesn’t even need it! Great slow cooker recipe for the average family! Thanks!!

I make slow cooker lasagna and we all love it. I also think it’s a plus not to have to boil the noodles before they go in. Looks like your turned out really good.

Hi, this recipe looks great! I would love to down size it to make it fit into a small crockpot. How do you think it would affect the cooking time?
Thanks, Barbara! Aren’t the small crockpots 2-3 sizes smaller than the regular size crockpots? If that’s the case with yours, I would alter the cooking time to 1-3 hours (checking every hour).
What do you do with the cup of water? It doesn’t say in instructions.
