This recipe holds a special place in my heart. Trent not only introduced it to me but he also cooked it for me when he proposed!
This is even his original hand-written recipe!
Poppy Seed Chicken
2 Chicken Breasts, cooked and shredded or cubed
1 can Cream of Chicken Soup
8 oz Sour Cream
1 sleeve of Ritz Crackers, crushed
1 stick of Butter
1 1/2 teaspoons Poppy Seeds
Healthy Option
Substitute 1 jar of Cauliflower Sauce for the cream of chicken soup.
- Mix together the chicken, soup and sour cream and place in a 2-quart casserole dish.
- Melt the butter in a pan on the stove. Once melted, add the crushed crackers and poppy seeds and stir. Place this mixture over the chicken mixture.
- Bake at 350 for 30 minutes or until the top is bubbly!
Unless you serve it with rice or another starch, this is only about 2 – 2 1/2 servings. It’s oh so good and very simple!
A Family Favorite – We made it this weekend. This is also my “go to” recipe when I’m making someone a meal to send to their house. We serve it with broccoli. Our sweet niece Loren renamed it years ago and it has stuck .. it is lovingly called “Chicken Junque” at our house.
