Your family will love this Black Bean Chocolate Chocolate Chip Cookies recipe! Not only are these cookies moist and delicious but they’re healthy and easy to make too. Definitely a cookie that the whole family will love…yes, even the kids.
Now, if you are turned off by the idea of black beans in cookies I dare you to give them a chance because you cannot taste them. I promise!
So, why black beans? Not only do they have tons of fiber and protein, but they’re fat free and also have magnesium and iron. (Check out the full nutrition list for black beans.) If you can’t taste them, why not sneak all that goodness into a cookie?
Black Bean Chocolate Chocolate Chip Cookies
15 oz can Black Beans, drained
1/2 cup Brown Rice Flour
1/2 cup Tapioca Flour
1/2 cup + 2 tablespoons Cocoa
1/2 teaspoon Salt
1 teaspoon Baking Soda
2 teaspoons Vanilla
3/4 cup Honey or Maple Syrup
4 tablespoons Butter
2 Eggs
1/2 cup Chocolate Chips
- Place all ingredients, except chocolate chips, in your food processor and mix well.
- Add chocolate chips, blending just to mix.
- Spray your cookie sheet with cookie spray and scoop cookie mixture onto it using a medium scoop.
- Bake at 350 degrees for 10-12 minutes.
- Cool on wire rack.
