It’s a make ahead recipe that’s not only healthy but quick and easy too, which is a must in my book. Plus I love how versatile it is – feel free to swap out the blueberries for a strawberry, peach or mixed berry baked oatmeal!
My family has fallen in love with this Blueberry Baked Oatmeal recipe so of course I have to share it with you. I make a 9 x 13 pan and our family of three will eat on it all week. Now if you have a larger family it’s also perfect for just one meal. Either way you look at it, I think you’re going to love it just as much as we do. It’s healthy, filling and super easy to make. Blueberry Baked Oatmeal
1/2 cup unsweetened Applesauce
2 Eggs
3/4 cup Honey
1 1/4 cup Milk (I use coconut or almond milk)
1 teaspoon Vanilla
1 teaspoon Salt
2 teaspoons Baking Powder
3 cups Oatmeal (I’ve used both quick cook and old fashioned)
10 oz frozen Blueberries
- Preheat oven to 350.
- In a large bowl, combine the liquid ingredients.
- Add dry ingredients and mix well.
- Mix in blueberries.
- Pour into 9 x 13 pan sprayed with cooking spray and bake for 40 minutes.
