apple brownies

This recipe is a hit with both adults and children alike! My nephew, who is highly allergic to almost everything, loves these Apple Brownies. I substitute oil in place of the butter when I make them for him!

As you can see, the ingredients are items that you already have in your kitchen!

In a large bowl beat together 1 cup of melted butter, 2 cups of sugar and 2 eggs until fluffy.

Fold in 6 sliced, chopped and cored apples.  In a separate bowl, sift together 1/2 teaspoon salt, 1 teaspoon baking powder, 1 teaspoon baking soda, 2 teaspoons cinnamon (you can add more if you like cinnamon…I did), and 2 cups all purpose flour.  Stir the flour mixture into the wet mixture until just blended.  Spread the batter evenly into a 9 X 13 pan.

Bake at 350 for 35 minutes, or until a toothpick inserted in the middle comes out clean.

If you don’t eat these straight out of the oven, heat them up in the microwave for 15 seconds and then top with a scoop of ice cream! Enjoy!!!
