As has been the case lately, I found these yummy creations on Pinterest. I had to sample the bar when it came out of the oven last night and it was great by itself. The white chocolate sets off the cranberries and they pair great together!
White Chocolate Cranberry Bliss Bars
Bars:
1 cup (2 sticks) butter, softened
1 1/4 cups brown sugar (I used half white and half brown)
3 eggs
1 1/2 teaspoons vanilla
1 teaspoon powdered ginger
1/4 teaspoon salt
1 1/2 cups all-purpose flour
3/4 cup dried cranberries, chopped
6 ounces (about 3/4 cup) white chocolate chips
Frosting:
4 ounces cream cheese, softened
3 cups powdered sugar
2-4 teaspoons milk
1/2 teaspoon vanilla
1/3 cup dried cranberries, chopped
Preheat oven to 350 degrees. Cream together the butter and brown sugar until smooth. Add eggs, vanilla, ginger, and salt and mix well. Gradually add flour and mix until smooth. Stir in cranberries and white chocolate. Pour the batter into the greased 9X13 pan and bake 30-40 minutes or until edges are light brown and a toothpick inserted in the center comes out clean. Cool completely before frosting.
Once the bars have cooled, beat the cream cheese, powdered sugar, vanilla and milk until completely smooth. You can either include the cranberries in the frosting or sprinkle them on top after it’s iced (I included it in the frosting).
