Before you turn your nose up at this recipe I recommend that you try it.  My friend, Cyndi, made these around Christmastime and they are absolutely yummy.  My husband (who hates spinach) and my niece and nephew all enjoyed them a few weeks ago.

This recipe is so very simple and I’m excited to share it with you!

Spinach Balls
2 boxes of frozen spinach
2 cups herb stuffing mix
2 small onions, chopped fine
6 eggs, beaten
3/4 cup melted butter
1/2 cup grated parmesan cheese
1 tablespoon garlic salt
1/2 tablespoon black pepper

Preheat your oven to 350. Cook the spinach according to the directions on the package. Drain the spinach well. Mix the spinach with the remaining ingredients. To make the balls I used a medium scoop. Bake on a cookie sheet for 20 minutes, or until golden brown.

*These can be frozen and thawed out an hour before serving.  They are also very tasty leftovers.
