I know I probably say this every time, but I have missed my freezer cooking sessions. Yes, they’re few and far between but they’re well worth the time and work.
My freezer is pretty bare and some extra meals to fill it is absolutely fabulous for this busy momma! I love knowing that I’ll have something available on those crazy days when I don’t feel like making anything on my menu. (Please tell me you have those days too!)
My Freezer Cooking Session Recipes
I always recommend that you plan out your freezer cooking sessions in advance. Choose which recipes you want to whip up and make sure you have all of your ingredients on-hand.
The day before my cooking session I sat down and made a rough list of how I thought things should go. Then the day of, I armed myself with my cookboook, er computer, and got to work.
I even planned ahead with cooking my chicken. The night before we had chicken for supper. I threw a few extra pieces on the grill (don’t forget to season it with salt and pepper) so I wouldn’t have to think about cooking it the next day. Plus, this saved me a ton of time!
This probably won’t shock you, but I thought I’d tell on myself. I didn’t read the instructions for freezing the pizza dough and let it rise before freezing it. (So, they might not turn out very good.) But I’ve made Kalyn’s fabulous recipe before and know it’s yummy. I could have kicked myself for not reading through the directions like I always encourage you to do!
My Freezer Cooking Plan
- Put ingredients in bread machine and make rolls. (My dough cycle takes 1 1/2 hours so I knew this would take the longest.)
- Start making the pot pies.
- Shred the chicken for pot pies. (Shredding the chicken took a lot longer than I thought so I had to break it up into two sections.)
- Make pizza crusts.
- Cook rice.
- Finish shredding chicken.
- Put rolls in freezer to flash freeze (I didn’t let them rise after forming them into balls.)
- Put everything in freezer bags, making sure to label them with what’s inside, date made and cooking instructions (if desired).
I encourage you to clean as you go. If not, you’re going to have a huge mess when you’re done. Plus, only having a few dishes at the end makes you feel better!
Now that’s a huge pot of rice!!! And I’ll go ahead and fess up (yet again) that I made too much. I guess my liquid to dry rice calculations were a little off. My plan was to make enough rice for four meals (two cups per meal), but I guess my brain was fried by that point. HA!
I’ve made chicken fried rice before but have never tried freezing the rice. So, I’ll let you know how it turns out. If you’ve frozen rice, please let me know how it’s turned out when you thawed it.
After all my hard work, I can’t tell you how happy I was knowing that I had some goodies in the freezer and a clean kitchen!
