When I saw this Strawberry Cake Mix Cookie recipe over at Pennywise Cook I knew I had to try it!
You could easily use any flavor of cake mix in this recipe! I can’t wait to try it with lemon or orange – perfect for summer!
Strawberry Cake Mix Cookies
Strawberry Cake Mix
Cool Whip, 8 oz
Egg
Powdered Sugar (for rolling)
Mix together the egg and cool whip. Add in the cake mix until well combined. Chill in the refrigerator for 20-30 minutes. Scoop the cookie dough into powdered sugar and roll. (I used a small scoop.) Bake at 350 for 12-15 minutes.
Grab a glass of milk and enjoy!

Hey, Tshanina, I make these cookies in lemon! I don’t roll them in powdered sugar, though. Just do everything else the same. Then make a glaze with powdered sugar and lemon juice to glaze the cookies after they’re baked. An extra step, yes, but yummy, bakery-style cookies.
I love anything lemon, so I bet your version of these cookies is yummy! And I bet the glaze just tops it off!
