As I was making my grocery list a few days ago I decided to plan a cooking session. I knew I needed to make taco seasoning and had been wanting to make something different for Trent’s breakfasts since he’s been eating cereal for a while. So, I added a few additional items to my list and my cooking session was born.
This cooking session took about 3 hours. (Of course, I was tending to a baby a few times so I’m sure you could get finished a lot quicker than I did.) Like always, I cleaned as I went – doing this makes it so much easier when you’re finished because you don’t have a ton of dishes to wash!
A couple hours before I planned on starting cooking I put the ingredients in the bread machine so that it would be finished by the time I was ready to start. I also put the chicken in the steamer so it would be cooked and cooled.
When I was ready to start, the first thing on my agenda was to get the chicken pot pie going. So I chopped the veggies for that and started that a-brewin.
While that was working I put on a pot of eggs to boil and soaked the strawberries and tomatoes I had gotten at the store in a water/vinegar mixture. (Soaking it with water/vinegar gets the pesticides off better than just regular ‘ole water.)
Once the chicken pot pie was at a place where I didn’t have to keep a constant watch on it, I whipped up a batch of taco seasoning mix and started on the breakfast pockets.
The breakfast pockets are a bit time consuming because you have to roll each piece out. But, once I got a system down it went rather quickly – I promise the end result is worth it!
To be honest, I wasn’t quite sure how my cooking session was going to go. The last time I did this was pre-baby. Dalton did really well and sat in his chair and watched a good portion of the time. He doesn’t look too excited in this pic that I shot really quickly but I have a feeling that in a few years he’ll be helping me with in the kitchen!
After I wrapped the cooled breakast pockets in foil I peeled the eggs and chopped up the strawberries and pineapple.
I always feel so fulfilled once I finish with my cooking/freezing sessions. And although it doesn’t look like I did much I’m happy with what I did get done. We have a large bowl of fruit salad and boiled eggs to munch on for quite a few days. Plus I took care of supper (for two nights since one went in the freezer) and there are 16 breakfast pockets for Trent. (Ok, 15 since I had one for lunch when I as finished!)
