This was my first attempt (that I can remember) of cooking with coconut. I’m happy to report that these Chewy Chocolate Coconut Bars are not only super simple to make, but they are delicious!

I had leftover coconut from my Santa Bread and I definitely didn’t want it to go to waste. So, I asked my Facebook fans what I should make and this was one of their many suggestion. (If you’re not following along on Facebook, I’d love for you to join the conversation!)

The original recipe was for cookies, but I was too lazy when I started cooking and opted for bars instead. I will admit, though, that the first row was difficult to get out of the pan. (It probably made it worse that my mouth was watering because I wanted a taste!)

The chocolate drizzled on top of the bars made it the perfect combination. I was excited when Trent gave them a thumbs up! (Isn’t it rewarding when your family enjoys something you’ve made?)

    Oh these look really good. I will have to make a batch of my dairy free sweetened condensed milk and give them a try. I’m sure my family would love them.

    These look AMAZING! I’m diabetic, so I’d have to substitute something for the sweetened condensed milk and use sugar free chocolate chips, but I’ll bet it wouldn’t be hard.
