I’m super pumped to share this post with you! I’ve done a bit of freezer cooking here and there, but I’ve never planned out multiple meals and made a few hours of it. After listening to Grocery University, I challenged myself to mix up my meal planning. (Ok, well, I don’t exactly meal plan but this is a good start!)
Well, today’s the day I can pat myself on the back because I finally took the plunge! It feels so good to have all this yummy goodness in the freezer!
I started out by pulling together the non-refrigerated ingredients and pans I planned to use for each recipe. (This was definitely ten minutes of prep that was well spent!) And, as you can see, my computer was my cookbook!
I should note that I definitely took my time during this process, and the three hours included taking detailed pictures (which I’ll share in my recipe posts). That being said, if you made the same recipes, I think you’d be able to shave at least 30 minutes off of your time.
I started off by heating the water and browning the meat for the Lasagna Rollups. Once that was in full swing I set about making the Brown Sugar Meatloaf!
You’re not going to like me when I say this, but I combined two different recipe for the Lasagna Rollups. (I’ll share my recipe with you once I taste-test it.) If you’re dying to whip these up, I used The Pioneer Woman’s and New Leaf Wellness‘ recipe.
Although a skosh time consuming, these were super simple to make.
While I was putting together the Lasagna Rollups, I boiled the noodles for the Chicken Spaghetti. Instead of boiling the chicken, I used the grilled chicken that I made last night for supper. (I knew I was going to be freezer cooking today so I grilled extra!)
And last, but not least, I whipped up some Beef and Bean Burritos. Once again, I combined two different recipes (and I’ll share the recipe when these have been taste-tested). I used Money Saving Mom’s and The Pioneer Women’s recipe.
I was able to do most of the cleaning as I went through the process, so thankfully I didn’t have a ton of dishes to clean-up when I was finished cooking. It’s a good thing too because this pregnant girl was getting a bit tired the last thirty minutes.
